Ingredients:
For the Cake:
- 250ml Coca-Cola (not diet or zero versions)
- 225g unsalted butter
- 250g self-raising flour
- 300g golden caster sugar
- 30g unsweetened cocoa powder
- 1 teaspoon bicarbonate of soda
- 2 large eggs
- 125ml buttermilk
- 1 teaspoon vanilla extract
For the Coca-Cola Icing:
- 115g unsalted butter
- 45g unsweetened cocoa powder
- 60ml Coca-Cola
- 1 teaspoon vanilla extract
- 400g icing sugar, sifted
Instructions:
Preheat your oven to 180°C (160°C for fan ovens), Gas Mark 4. Grease and flour a 23cm x 33cm baking tin.
Make the Cake:
In a saucepan over medium heat, combine 250ml Coca-Cola, 225g butter, and 30g cocoa powder. Stir until the butter melts, then remove from heat.
In a large bowl, whisk together the self-raising flour, golden caster sugar, and bicarbonate of soda.
Add the Coca-Cola mixture to the dry ingredients and mix until combined.
Beat in the eggs, buttermilk, and vanilla extract until smooth.
Pour the batter into the prepared tin and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Make the Coca-Cola Icing:
About 5 minutes before the cake is done, start making the icing. In a saucepan, combine 115g butter, 45g cocoa powder, and 60ml Coca-Cola. Heat until the butter is melted, stirring well.
Remove from heat and mix in the vanilla extract. Gradually stir in the icing sugar until the mixture is smooth.
Finish the Cake:
Once the cake is done and while it's still warm, pour the warm Coca-Cola icing over the top, spreading evenly.
Allow the cake to cool completely in the tin before slicing and serving.
